About this wine:
This wine is created using a unique fermentation process in which the free run must is separated and fermented at low temperature in stainless steel, much like a rose wine would, The other portion of the must, along with skins and seeds is then fermented in large 50 HL Slovenian Oak vessels in the traditional warmer temperature. Just before both portions are finished, they are recombined to co-ferment to completion. The cold fermentation preserves the delicate fruit aromas which the Sangiovese grapes carry, but are rarely found in the finished wine, while the warmer fermentation gives the body and presence for which Sangiovese is treasured. The final co-fermentation ensures that the wine is seamlessly integrated. Harmony in a bottle! With a beautiful Ruby color, the nose carries bright red cherries and violets with smoky, mineral and light umami undertone. A complex wine, it opens to rich fruit, mainly plums and figs, as well as rosemary providing a beautiful balance. The palate leans into those fruit notes, but with a dusting of bitter cocoa that preserves the sanguinity. Full body, balanced acidity and a medium plus finish, this wine’s harmony shines through every sip.
